Most of you probably know these grapes by what they eventually become in your glass. Foster’s Reserve and Mountain Midnight, our port-style wine. 🍷
For Mountain Midnight, we do things a little differently. Our port-style wine is not fortified, meaning we don’t add distilled spirits to increase the alcohol like you would with a traditional Port.
Instead, it starts right here in the vineyard. 🌿
We allow some of our Chambourcin grapes to hang on the vine longer, giving them extra time to ripen and build a higher Brix (sugar level). As the fruit continues to mature, the sugars become more concentrated and the flavors get richer, giving us the naturally ripe, full-bodied fruit we want for Mountain Midnight.
It’s one of those wines where the process begins long before the grapes ever reach the winery.
